Summer Cold Tomato Soup


This is a wonderful soup for those hot Bulgarian summers and makes a great alternative to tarator soup,and a good way to help use up the abundunce of those tomatoes from your garden.

It is extremely easy,and quick to prepare,a real break from standing over a hot stove!


8 Medium sized Tomatoes chopped roughly

100-150g Olives-green or black

1/2 ltr Tomato juice

1 tablespoon Lemon juice

1/2 teaspoon Ground Black Pepper

1 Red Pepper chopped roughly

Salt to taste

Sugar(optional) depends on how sweet the tomatoes are

1 handful celery leaves chopped roughly

250g white cheese(sirene or feta)

1 tablespoon Chopped Parsley

2 Cloves Garlic (or more if you want to be on your own for the day)



Put all ingredients into blender exept white cheese and olives.

Blend everything down until liquid.

Depending on the capacity of your blender,this can be done in 2 halves and later mixed together.

Put the soup in the fridge until cold enough to your liking,usually 1 hour is sufficient.

Whilst the soup is cooling chop up the cheese small and de-stone the olives and chop them also.

Add these to the soup prior to eating.
