Take advantage of this marvellous soft fruit and try our easy and simple recipe for Bulgarian Roasted Peaches.

Serves 6

3 tablespoons of butter, melted

6 firm and ripe peaches, washed, halved and stone removed

1 teaspoon of ground cloves

½ cup vanilla sugar*

1. Heat oven to 350 degrees. Use some of the butter to grease the bottom and sides of a round glass baking dish, large enough for peaches.

2. Place peach halves, skin side up, in dish. Place a sprinkle of cloves in the centre of the peach half. With remaining butter brush peach halves and evenly coat in vanilla sugar. Bake in oven for 30 minutes. Before serving coat peaches in pan juice.

3. Serve warm or at room temperature, with yogurt, ice-cream or whipped cream. Or simply on their own. Delicious!

*Vanilla sugar can be replaced by mixing 1tsp of vanilla extract with 2 cups of granulated sugar, mix well, then spread out on baking tray and allow to dry for 5 hours. Vanilla sugar is widely used throughout Europe in baking as a topping, or added to coffee and hot chocolate for extra sweetness.
