Bulgarian Baked Cabbage

The months of august and September are busy times for Bulgarian villagers, preserving all their produce from the land and storing for the winter months.


Baked cabbage is a delicious and warming dish that is eaten during the harsh winters of Bulgaria. It is originally prepared with pickled cabbage which locals have preserved at the end of summer. However the recipe below is adapted to using cabbage and vinegar separately. (If using Bulgarian pickled cabbage you do not need to add the salt and vinegar).

This is an economical, fast and simple dish to create and will leave a fantastic appetising aroma whilst cooking.

1 Large Cabbage
3 Tbsp Paprika
1 Tbsp Pepper
1/3 Cup of oil
1/3 Cup of Vinegar
1-2 Cups Water
3 Chopped Tomatoes
2 Chopped Peppers

Chop the cabbage, peppers and tomatoes and place in a large oven proof dish. Add water, oil and vinegar and spices, stir together and mix thoroughly into the cabbage. Bake in oven for 1 -1 ½ hours at 160 Celsius or gas mark 6. Stir frequently and do not allow the cabbage to burn.

Tip: Although this is a vegetarian recipe, try meat alternatives such as a rack of pork ribs or a whole chicken and cook with cabbage for the duration. Or for last 30 minutes add sausages chopped into thick chunks. Enjoy!
