Bulgarian Pork and Potatoes

This Bulgarian Recipe was first introduced to  me by my wondeful neighbour who has over the past  few years shared many recipes and traditions.Pork and Potatoes is a delicious combination of pork,potatoes cooked in a tomato sauce with herbs.

A easy dish to prepare for family and friends to enjoy, especially on a cold winters' day in Bulgaria.

 

 

 

 

 

 

Ingredients

1-2 lbs of diced pork
1 onion chopped
2 tbsp oil
1 carrot, peeled and sliced
1 pepper, sliced
5 large potatoes, peeled and diced
1 can of chopped tomatoes (8oz)
2 cups of hot water
2 tbsp parsley
1 tsp salt
1 tsp paprika

Method
In a large pan add oil, salt and meat,fry gently for about 15 minutes on a medium heat and stir occasionally.Add onion,carrot and pepper to meat and continue to cook for about 5 minutes.Then add paprika, water and stir well, then cover and cook for 30 minutes.Stir frequently.Add potatoes, and cook for 15 minutes, then add tin tomatoes,parsley and season and continue to cook for 5 minutes.Turn off heat and let the dish rest for 10 minutes,before serving.Garnish with parsley and serve.Delicious.

It is worth noting chicken or beef could be used as an alternative for this Bulgarian dish if you prefer.If using chicken reduce cooking time to 15 minutes.
