Kozunak with Almonds

Kozunak is the traditional bread made for Easter in Bulgaria,the bread is lightly sweet

and can be served for breakfast or as a snack (Bulgarians sometimes serve it with yogurt and Bulgarian honey). This recipe will make two loaves where one is left at the Church for the priest and the other is eaten after the Easter service.



1kg flour
4-5 eggs
1/4 kg sugar
1 1/2 cups milk
1/2 teaspoon salt
1/4 kg butter
1 lemon
Pinch of grated nutmeg
1 egg for glaze
2 tbsp raisins
2 tbsp peeled almonds
yeast - a piece the size of about 3.5 x 5.5 cm


Sift flour and make a small well in the middle. Beat together eggs, milk, sugar and salt. Pour mixture into well in the flour,stirring all the time.

Blend the yeast with water, add to the mix to form a dough.

Knead dough, it may help to cover hands with butter or oil. When dough is formed, cover with a towel and leave to rise in a warm room,until it is twice its size.

Knead the dough again,add nutmeg,lemonzest and raisins. Grease a tin to suit what shape bread you want to make.Place half the dough inside and leave to rise again. Do not allow to rise too much it should only fill half of the tin,and allow it to rise half the tin size again as it will overflow when cooking.

Brush top with a beaten egg and place on almonds.

Bake in a moderate oven. Remove from baking pan when cooled.

Sprinkle with sugar mixed with vanilla if require extra sweetness.

Why not try to make a plait or ring instead of the tradional loaf.
