Mushroom Risotto

Rice dishes are extremely popular throughout homes in Bulgaria, and popular culinary delights on the traditional Bulgarian menu.

Here we have a quick and simple risotto that will suit the appetites of  both meat eaters and vegetarians.

Risotto with mushrooms

6 tbsp oil
2 onions, chopped
2 cloves of garlic, chopped
1 tsp grated lemon peel
2 tsp fresh thyme, chopped
350 g rice, washed
150 ml white wine
990 ml chicken stock
500 g mushrooms, washed and cut into large chunks
1 tbsp fresh parsley, chopped
Salt and Pepper


1. Using half of the oil fry the onions, garlic, lemon peel and thyme gently for a few minutes.
2. Add the washed rice and stir for a minute, continuously.
3. Stir in the wine and cook until it evaporates.
4. Gradually pour the hot chicken stock into the rice mix and stir well.
5. Cook the rice for about 20 minutes until the rice has absorbed the stock.
6. Meanwhile in remaining oil fry mushrooms in a seperate pan.
7. When rice is cooked add the mushrooms, parsley and seasoning then stir well
8. Leave covered for a few minutes to absorb flavours and serve warm and enjoy.
