Mish-Mash is a traditional Bulgarian omelette and a perfect dish for using up all the leftovers in the fridge! The Bulgarian organic ingredients make this a fresh and filling meal and it is often served with thick toasted slices of handmade bread in Bulgarian restaurants.

A really quick and simple recipe which will be popular with all the family, adults and children alike!

Ingredients: (serves 4)

  • 8 eggs
  • 1 onion
  • 2 cloves garlic
  • 2 green peppers
  • 2 medium tomatoes
  • 200 gr. crumbled sirene (or feta)
  • 50g butter
  • Vegetable oil
  • Chopped fresh parsley (third of a coffee cup)
  • Paprika
  • Salt and freshly milled black pepper


Cut the onions into rounds, finely chop the peppers, parsley and garlic. Peel the tomatoes and dice.

In a bowl, beat the eggs and add to this the crumbled cheese.

Melt the butter in a frying pan, add a splash of oil and cook the onions and garlic for a few minutes. Keep stirring and add the peppers. Continue cooking for another 2 to 3 minutes. Add the chopped tomatoes and reduce the liquid for a good 10 minutes.

Season with salt and pepper, add a good sprinkle of paprika, pour over the eggs/cheese mixture and cook for another 3 or so minutes, stirring very gently.

Sprinkle with parsley and serve immediately.

Perfect with thick slices of toast!
