Courgette And Potato Soup

As the cooler weather approaches in Bulgaria this hearty, warming soup is there to be enjoyed  this winter, using simple ingredients and taking little time to prepare.


2 medium courgettes, washed and cubed
2 medium potatoes, peeled and diced
1 large onion, peeled and diced
3 garlic cloves, crushed
1 tbsp butter
1 tbsp dill
1 tbsp paprika
2 chicken stock cubes dissolved in 1 litre of water
Season with salt and pepper


In a large saucepan fry the onion and garlic in butter for a few minutes until soft, then add all other ingredients and bring to the boil and cook for 15 - 20  minutes or until potatoes are soft. Drain the liquid and keep, blend the vegetables until a smooth puree and then combine the kept stock and stir. Serve with fresh bread and enjoy.
