Creme Caramel

Crème Caramel is one of the most popular desserts in Bulgaria, although it does not originate from Bulgaria. It is a delicious, guilty pleasure and is the perfect treat anytime of the day.



8 eggs
4 pints of milk
1 - 2 cups sugar
1/2 tsp vanilla
1/2 tsp cinnamon
10-12 small oven-proof cups


In a bowl mix the eggs and milk and stir well. Add half of the sugar, cinnamon and vanilla, taste and add more sugar if preferred, the more the better the taste is.
Then melt half of the sugar in a heavy based pan, stirring frequently so that it does not burn, If needed add water so that it melts easier, then pour evenly into the cups and cover the bottom completely.

Pour the egg mixture into the cups and place in a pan of water, ensure the water level is the same as the egg mix. Bake in an oven at 190 celcius for 25 minutes until the top has formed a golden brown crust. Place the cup upside down on a plate gently loosen with a spoon. Serve on its own or with whipped cream and enjoy.
