Cabbage Soup

Soups are a very popular dish served throughout Bulgaria, both in the home and on the menus of bistros and restaurants. This is especially apparent at this time of year when the weather is cold and there is a limited supply of fresh vegetables.

Bulgarian's are renowned for making tasty soups from limited inexpensive ingredients, and this soup in particular is a good example of this.

 

 

 

Ingredients:

Half of a cabbage head
2 Onions
3 Carrots
1-2 Tomatoes
5-6 tbsp oil
5-6 Cups of water
1 Stock Cube
Salt and Pepper
1 tbsp Parsley

 

Method:

Wash and finely chop all vegetables. In a large saucepan add the oil, and fry the onions for a few minutes until soft. Then add all of the other prepared vegetables and fry for a few minutes. Add a stock cube, water and seasoning and stir well. Bring to the boil and simmer for 20-30 minutes until the vegetables are cooked. Season well with salt, pepper and parsley and serve hot with crusty bread.
