History of Indian cuisine

The name Kohinoor (translated from Hindi "mountain of light") is the name of 105 carat diamond, which has been the biggest diamond in the world known to people for thousands of years.

India is one of the largest and most populated countries in the world, so there is not only one kind of Indian cuisine but it generally can be divided to North, South, East and West. Although there are lots of common characteristics between the different kinds of Indian cuisine, each region has its own regional specialties. The typical Indian spices have been grown in India for five thousand years and later introduced into Europe. Now the Indian cuisine industry enjoys enormous success all over the world, especially in the U.K where the much-loved dish is the Chicken Tikka Masala.

Indian food is in general healthy, prepared with a great number of natural ingredients. In addition, 30% of the population in India is vegetarian, but Indian cuisine has a great diversity of dishes to cater for all tastes with recipes including chicken, lamb and fish.

“I was staying in Sofia for 6 months and was missing Indian food! A Bulgarian friend told me about the Kohinoor restaurant and I was overjoyed! We arranged to visit and after being given directions the restaurant was easy to find in a great part of Sofia. It has a warm and friendly atmosphere and a lovely place to eat. The menu was big with a lot of choice and the food was simply outstanding. I visit Kohinoor Indian restaurant regularly when I am in Sofia. I would certainly recommend Kohinoor if it is your first time sampling Indian food or if it is a favourite with you”.
