Stuffed Peppers with Egg and Cheese

Ingredients:

6 eggs
1 kg red peppers
250g white cheese
Parsley
Breadcrumbs
Oil

Method:

1. First of all, you need to peel and seed the red peppers.
2. Mix together four of the eggs with the crumbled cheese and stuff the red peppers with this mixture.
3. Mix together the remaining eggs and breadcrumbs and roll the peppers into this mixture.
4. Fry the peppers in hot oil until soft and serve with chopped parsley.

Bulgarian Bean Dish

Ingredients:

250g white beans
1 tomato, grated
1 onion, chopped
1 carrot, chopped
2 tablespoons paprika powder
1 tablespoon oil
Pinch of salt and dried mint

Method:

1. Firstly, boil the beans in water for approximately 5 minutes, take them of the heat, and drain.
2. Then cover the beans with cold water and cook the beans again until softened.
3. Add the rest of the ingredients above and cook for an extra 30 minutes.
4. Make sure you serve this dish hot, with bread or rice.

Monastery Stew

Ingredients:

3 potatoes
2 tomatoes
1 onion
1 carrot
½ celery
Half a cup black olives
200g small onions
¼ cup rice
2 cups mushrooms
Half a cup white wine
Pepper and salt
Half cup sunflower oil
Parsley
Cup of water

Method:

1. Chop onions, carrots, tomatoes, celery and potatoes.
2. Cook the onions, celery and carrots in some water and oil.
3. To the mix, add in the olives, mushrooms, small onions, and pepper.
4. Add the wine, water and salt and cook until soft.
5. Then, add in the potatoes and rice, cook for 15 minutes and then add the tomatoes. Then, season with salt and pepper.
6. Pour this mixture into a baking dish, top with parsley and bake for 10 minutes, or until the mix is softened.

This is because they have a very low risk of becoming obese, developing cancer, cardiovascular problems and diabetes. Vegetarians also have better cholesterol levels.
