Bulgarian Sausage Recipe

A popular Bulgarian sausage recipe found throughout the country is kebabche. They are a tasty spiced, minced meat grilled sausage. Kebabche is a cylinder shaped rissole typically made from a mix of beef and pork, and a selection of spices.

The preferred spices added to the Bulgarian sausage recipe are black pepper, cumin and salt. They are an extremely common snack that can be purchased from street vendors, served with a bread roll and a condiment such as ketchup, mustard or lyutenitsa. They can also be found on most menus in restaurants, and generally ordered along side a portion of chips and a Shopska salad for a more substantial meal. They are a delicious snack with a glass of beer.

The word kebabche originates from kebab, the name of many Eastern dishes. Kebabche is also united with another similar food and that is the kyufte, which is similar in meat and spices, but is a round shape like a burger, and has extra ingredients such as onions and parsley which kebabche does not have.


1 kg minced meat, a beef and pork combination works best
1 tbsp salt
1 tbsp ground black pepper
1 tsp cumin


In a large bowl mix all ingredients together well. Place in a fridge for at least 30 minutes. Remove and roll into sausage pieces. The best way to cook them is on a grill, or BBQ. The recipe will make around 30 sausages.

The Bulgarian cuisine is similar to its neighbouring countries, Greece and Turkey. The Bulgarian diet also includes a lot of soups, pulses and dairy. Sirene and yogurt are a big influence in the daily diet. Sirene is often served in salads and pastries. The delicious Bulgarian cuisine is relatively healthy as most meals are accompanied with a salad, and the preferred method of cooking is grilling of all types of meats like the kebabche in our Bulgarian sausage recipe.
