Tarator

The summer heatwave across Bulgaria makes this cooling Bulgarian yoghurt and cucumber soup absolutely perfect if you need to cool down! However, don't be put off by the fact this is a cold soup, on a hot day or a warm late summer's evening, it makes a very pleasant starter or a refreshing snack. Plus, it's perfect for vegetarians!

Making the very best of Bulgaria's 'bio' produce and its world-famous natural yoghurt, this dish is so simple to prepare and yet incredibly delicious.

 

 

Ingredients:

300 - 400 g diced cucumbers (peeled)
1/2 kg fresh plain yoghurt
7 - 8 ground walnuts
3 - 4 crushed garlic cloves
(or more if you don’t have a date!)
1 tablespoon oil
Small handful of finely chopped dill
Salt

Instructions:
Beat the yoghurt using a hand whisk or a fork.
Add the garlic, walnuts, cucumbers, oil and a pinch of salt.
Mix well.
Dilute the mixture to the desired
consistency with chilled water and stir well.
Serve cold with a sprinkling of chopped dill.
