Baked Creamed Spinach

Baked creamed spinach is a traditional starter and is rich in nutrients despite its simple ingredients; combining protein, calcium and lots of vitamins! Fresh spinach can be bought on most Bulgarian markets for around 1 leva per carrier bag full!

Ingredients (4-6 people):
1 kg spinach, frozen or fresh
100 g butter
200 g sirene (or feta) cheese
2 eggs
salt and pepper
1-2 medium onions, finely chopped

Wash the spinach and roughly chop if fresh. Bring to the boil in salted water until soft, then drain and leave to cool.

Either mash or blend the spinach in a food processor, depending on how fine you want it. Mix it with the feta, then crack the eggs in and mix well with salt and pepper to taste.

Spoon the mixture into ovenproof pots and place in a very hot preheated oven for around 15 minutes.

Baked creamed spinach is an ideal starter/dip with crusty or pita bread, or as a side dish with a main meal, such as pork and potatoes.
